ANCHOVIES WITH SAUTÉED SPINACH AND GRILLED BREAD

Ingredients

  • 2 cans of TRATA anchovies with oregano
  • 2 tbs olive oil
  • 2 tbs soft butter
  • 2 spring onions
  • 2 cloves of garlic, thinly sliced
  • 2 tbs mustard
  • 1 lemon, zest and juice
  • 1/2 chili pepper, finely chopped
  • 200g baby spinach
  • 4 slices of country style bread
  • Salt and freshly ground pepper

Method

Heat a non-stick frying pan over high heat and add 1 tbs olive oil and 1 tbs soft butter. Sauté the baby spinach for 1-2 minutes until slightly tender. Season with salt and pepper, pierce a clove of garlic with a fork then stir the spinach. When ready, spread the spinach on the bread slices.

Using a cutting board and a sharp knife thinly slice the garlic, spring onions and chili pepper.Heat the frying pan over high heat and add the remaining olive oil and butter. Sauté the garlic, spring onions, chili, add zest and lemon juice and simmer for 1-2 minutes.Add the anchovies with oregano to the pan and let simmer, stirring carefully, until the sauce is slightly thickened. Remove the frying pan from the heat, divide the anchovies among the grilled slices, spoon the sauce and serve.
